Rice & Almond Porridge

A great way to use left-over rice (or quinoa) – and the addition of white almond butter, mixed seeds and gojis take it to another level!

Ingredients

  • 3/4 cup leftover cooked plain rice
  • 1 tbsp Sunflower seeds
  • 1 tbsp Pumpkin seeds (pepita)
  • 1 tbsp shelled hemp seed
  • 2 tbsp goji berries
  • 1 cup plant milk of choice (I like hemp milk)
  • 1 tablespoon LOVENUTTY white almond butter

This can be served cold or warm.

If you’d prefer it warm:

Gently reheat the rice in your rice cooker or a small pan
with the milk to prevent it from sticking.

For the cold version, place the rice in a bowl and top with the seeds and gojis. Pour over the milk and add the white almond butter and give it a stir.

Assemble as above – and enjoy!
